Ever get bored of eating chicken nuggets and beans religiously? Don’t worry, no judging here. Being a student and making a yummy dinner doesn’t usually go together hand in hand. Sorry, although Super Noodles may be admittedly
kinda tasty, it’s perfectly okay to be bored of eating that chicken flavoured mush.
Let’s use up those frozen fish fingers shall we?
For 1 hearty sandwich-
-Slices of bread
-1 tablespoon Mayo
-1 tablespoon lemon juice
-Salt and Pepper to taste
Start by putting your fish fingers into the oven to crisp them up. It really doesn’t matter if you have a cheap brand of fish fingers. As long as they are good to eat, cook ’em. I used frozen fish fingers with a pepper panko crust.
Once your fish fingers are cooking, you can start to make a nice little sauce to go with it. Lemon and fish goes together like salt and pepper. It’s a must! Tartare sauce is also golden with fish, but realistically I doubt you have tartare sauce lurking in your student house fridge.
Mix lemon juice, mayonnaise and pepper together. I like mine quite zingy so I do tend to add extra lemon to taste. Then, toast your bread slices. Lightly. Very important, you don’t want toast just slightly toasted bread
When your fish fingers are ready, cover the bread slices with your sauce and add a lettuce leaf to add extra crunch. Place your fish fingers into the sandwich accordingly and eat up!
Done! You’ve managed to eat a delicious meal, use up those frozen fish fingers AND you’ve also got some healthy fish goodness in you. Result.
Great as a snack or lunch, combine with salted chips for more of a filling meal.
