One of the foodie trends I always see on my timeline is the massive cheese wheel, with flaming pasta being swished about inside the wheel. Not that I would say no to pasta literally coated in a huge cheese wheel, but I do always find myself asking, what kind of flavours can you expect from this dish?
Watching the videos it’s hard to see exactly what you can expect from this meal. The pasta looked fairly tame, no cream or sauces to accompany it. Which led me to research late at night, what IS this pasta dish? Turns out, the majority of the time, the pasta inside the wheel is actually Cacio e pepe. It’s a creamy, pepper and parmesan cheese dish. It had me at the word creamy.
Although you and I may not have the luxury of using a gigantic cheese wheel, you can create the delicious peppery pasta dish at home with just four ingredients. Perfect.
Cooking time: 15 mins
-Spaghetti or linguine (For two people about half a packet)
-Parmesan freshly grated
-1 tbsp of butter
Cook the spaghetti according to instructions. After cooking, keep 1/3 of the cooking water and put into a glass.
Using the same pan, melt butter and grind a good tablespoon of black pepper into the pan. You want to let the pepper soak into the butter for a minute or so.
When the buttery pepper has started to simmer, pour in a small amount (2 tbsps) of the cooking liquid to form a thick sauce. Then empty the pasta into the dish. Mix the pasta thoroughly so the sauce covers it.
Grate half a cup or so of fresh Parmesan and stir into the pasta allowing it to melt. Coat the pasta thoroughly with the sauce, if you need more sauce you can add more water to the dish.
Add salt to taste and the dish is ready to eat!
