You know those cartoon images of a huge stack of pancakes, practically drowning in maple syrup? The kind Homer Simpson eats.
Morning food porn is very important. Sometimes you need something other than a slice of toast to satisfy the little devil inside your stomach. That’s exactly what this recipe is for. Think a big beautiful stack of pancakes. With banana hints, these pancakes will rise to be thick, fluffy and just delicious. It’s worth a try.
For 2. Cooking time: 15 mins
-Half a cup of flour
-1/3 cup of sugar
-1/3 cup of milk
-1 banana (add another for stronger banana flavour)
-2 medium eggs
-1/2 teaspoon baking powder
-1 teaspoon vanilla bean extract
Mash up the banana into a bowl until it has formed a thick paste. Add eggs and whisk until the mixture is smooth. Then add your vanilla and milk and whisk.
Next, sift in the flour, sugar and baking powder and mix well until the mixture is thick and smooth. You should see a little foamy bubbles which is perfect, it will make the pancakes super light and fluffy.
Once you have used up all your mixture, serve up on a plate and drizzle maple syrup all over. I also tried these with Nutella. Banana and Nutella, is there a better combo?
